Enchiladas

For those who are in for a south of the border taste, without going to the local Mexican Food joint, here is something to satisfy the craving…

For this recipe I am going to cheat.  Making enchilada sauce from scratch is a pain in the ass, but is better than the canned. But, like I said, I am cheating so we are going to use the canned.

Here’s what we’ll need:

1.5 lbs lean ground beef.

2 T. Chili Powder

1/2 C diced white Onion

20 oz. Can Enchilada Sauce

Salt and Pepper to taste

2 C shredded Sharp Cheddar Cheese

14 Corn tortillas ( get the good ones )

11.5 x 9 baking dish

Preheat oven to 300 degrees

In a skillet, combine ground beef , onion, chili powder, salt and pepper.

Cook till beef is done.  drain.

add Enchilada sauce and simmer for 10 min.

While meat is simmering, heat Tortillas so they are warm and soft.

Spray baking dish with non-stick spray

place about 3 T of meat on each tortilla, in the center, then roll tortilla and put in dish ( seam down )

repeat till dish is full.

Cover with cheese.

Bake till cheese is melted.

Serve with your favorite side dishes

Yup, them there is Biscuits

What is it about a home made biscuit that starts making the mouth water? I don’t know either cept to say that they’re damned tasty. Pretty simple to make and the results?…. ZOMG FEED ME!!

So here is what we’ll need:

2 C Flour

4 t. Baking Powder

3 T. Butter

1/3 t. salt

3/4 C Milk

Preheat oven to 450 degrees

In a large bowl, mix dry ingredients well. Use a pastry blender to blend the butter in to the flour. You know it’s well blended when it looks like a bowl of flour pellets. Slowly add the milk and stir well. Now it’s going to look like a big gooey ball. At this point I place a piece of newspaper on the counter and coat it with flour, and dump the dough onto it. Coat your hands in flower and kneed the dough for about a minute. ( for all you folks that say don’t over handle your dough…. I got something you can handle =-) This i my blog ). Now the dough should be smooth. Roll out to about 1/2″ thick. Grab ya out a water glass/coffee cup and coat the rim in flour. Cut out your biscuits and placed on a greased cast Iron skillet or other baking dish. Place em kinda close to each other so they rise up ( and don’t spread out and get hard ). Give em a light topping with melted butter and bake for 15 min.

Kitchen Sink Skillet

As the Name suggests, there is quite a bit of stuff in this. ” Everything but the kitchen sink” as it were.

This is enough to feed 4

8 Large eggs ( blended well )

8oz. tube of sausage

1 bell pepper ( diced )

1 medium red onion ( diced )

2 Jalapeño peppers ( diced )

2 Cups fresh potato ( diced )

2 Large Tomatoes ( diced )

3 C shredded Cheese ( I use a blend of Colby/Monterey Jack/Cheddar)

1t. chili powder

1t. black pepper

1/2 stick real butter

In a large frying pan (skillet) melt butter. Then add potatoes, Onion, peppers, black pepper, chili powder, and sausage. Cook till sausage is done and potatoes are tender.

Drain fat from skillet.

Add eggs and scramble well. When eggs are done, remove from heat and top with cheese and tomatoes. Cover till cheese is melted.
